One package Fusilli
2 medium zucchini cut into matchsticks or rounds
3 cloves garlic, minced
1/3 cup pine nuts
2 tablespoons olive oil
3 tomatoes cut in small cubes
¼ cup chopped fresh basil
11/2 cups mozzarella cheese cut in small cubes
2 teaspoons fresh lemon juice, or more to taste
2 tablespoons olive oil, or more to taste
Fresh parmesan, to taste
Boil the pasta in salted water. Sauté the zucchini, garlic and pine nuts in olive oil until the garlic is golden and the zucchini is just tender. Put the zucchini into a large serving bowl and add the tomatoes, basil, cheese, lemon juice and olive oil. When the pasta is al dente, drain and add to bowl. Toss everything and serve immediately with parmesan.
As the weather gets warm, this is an easy, delicious, healthy dish to serve. If you can get some mozzarella cheese through Mediterraneo Restaurant, even better!
