1. Always have the credit card machine brought to your table. Do not hand your credit card to the waiter to take away. This allows time for the waiter to copy your details, or make an imprint of your card.
2. The credit card machine produces two slips of paper. One for you to sign and one for you to keep. If you notice carefully, the copy that the restaurant keeps usually has your full credit card details on it. Do not let the restaurant keep this copy. If you insist, they will accept the other copy with only the last 4 digits of your credit card on it. There is no reason for the restaurant to have a copy of your complete credit card details.
Kenya is the only place that I know of that uses this system. We need to insist to business establishments that this is not acceptable.
